Menu Magic = Satiated Sect
The snooty foodie party was a huge success! The food flowed from about 8-11:30 and, based on the festive banter in the room, the wine flowed deep into the night! I always like to celebrate the successes and examine the opportunities revealed by events like this.
Successes - the timing was good, no long lags between courses (except an intentional one to let the guests catch their breath). Overall the plates came out like I wanted them to. Of course all of WMC’s products, quail. duck, pork and Wagyu beef performed well.
Opportunities - I forgot the pickled onions for the soup! Rookie mistake big time. Always check everything off on your prep list! I weakly subbed chives. Spoonbread does not travel well. I should have cooked it on site but I was worried about having one oven and so much to heat up. I cooked it Saturday afternoon but it fell and became brick like. So sad.
Thanks to my wife and bonus daughter for all their help and to Janna and Alan for being such great hosts.
Has anyone out there had an event go really south? You know, open the back of the truck and everything is on the floor or lost electricity or any of the other million things that can go wrong when you take the show on the road. Tell me about it.
