What is a Meat Blog?

DSC_0035I’m beginning to ask myself that same question. Is meat- beef, lamb, pork, veal etc. a large enough topic for a blog? How many meat-heads are out there? (Plenty but that’s another posting.) Here is what I think it should be but first, a little background.

This blog is not solely about edible animals, although I am the corporate chef for a meat company. Fine proteins and issues regarding the meat industry will surely be discussed, and  I’m very interested in your thoughts, but I want to bring a full load of comestibles to the table, literally.

With almost 20 years in the food and hospitality industry I’ve seen, eaten, hired, fired, served, laughed and cried a lot. So, here are a few topics to get the ball rolling…

  • Dining - The good the bad and the ugly
  • Food - Safety, ethics,politics
  • Trends - Sustainability, provenance, organics, natural, authenticity, going green
  • Wellness/Health
  • Rights - Animals, customers, workers
  • Flavor profiles
  • Next Concepts
  • Recipes

This is plenty to get us started. I’ll get back to you soon.
